Properties: White powder, relative density 1.86, soluble in water, insoluble in ethanol, water solution and dilute inorganic acid heating hydrolysis into phosphoric acid, hygroscopicity, water absorption after the formation of six crystalline hydrates, heating to above 220 degrees Celsius decomposition to produce sodium metaphosphate.Usage:Used as starter, used for baking food, controlling fermentation speed; used for instant noodles, reducing rehydration time of finished products, non-sticky and non-rotten; used for biscuits and cakes, shortening fermentation time, reducing product breakage rate, loosening and tidy voids, prolonging storage period.
