Calcium propionate is a product with molecular formula 2 (C3H602) Ca, and white light flake crystal, or white particles or powder.It also has a slightly special smell, easy to deliquescence in humid air. Monohydrate is a colorless monoclinic plate-like crystal. Easily soluble in water, slightly soluble in ethanol. Calcium propionate is a new type of food additive.It is a safe and reliable fungicide for food and feed approved by the World Health Organization (WHO) and the Food and Agriculture Organization of the United Nations(FAO).Calcium propionate is almost non-toxic to human body. As a preservative in cosmetics, the maximum allowable concentration is 2%(calculated by propionic acid).
Calcium propionate is alkaline, which will inhibit yeast activity and delay dough fermentation. The use of calcium propionate in bread also has the effect of strengthening calcium, which is conducive to the formation of gluten tissue. It has extensive antibacterial effect on mold, yeast and bacteria. The lower the pH value, the higher the antiseptic effect. Mainly used for bread, pastries, cheese and feed as a preservative. Calcium propionate can also be used as an additive for toothpaste and cosmetics, which has a good antiseptic effect.
